Snowflake Sugar Cookies



Warming up to these beautifully decorated sugar snowflake cookies prepared for

MHCA's annual winter semi formal event in a crisp white and cool blue snowflake wonderland fantasy theme.



INGREDIENTS:


2 sticks unsalted butter

1 cup granulated sugar

2 eggs

4 cups all-purpose flour sifted 

3/4 cup cornstarch sifted

3/4 teaspoon kosher salt

1 teaspoon vanilla extract


For the Royal Icing:

1/2 cup water

Blue food coloring

Sparkle sugar 

4 cup confectioners sugar

5 tablespoons meringue powder



INSTRUCTIONS:


Preheat to 375 degrees

.In a standing mixer fitted with a paddle attachment, cream butter and sugar together.Add eggs.


On low, mix in sifted flour, sifted cornstarch and salt.


Add vanilla.


Separate dough into two parts.


Wrap in plastic and chill for about an hour.


Roll out between two pieces of parchment paper.


Roll to a 1/4 inch thickness.


With a cookie cutter, cut out snowflakes


Place cookies on a baking sheet lined with parchment paper.


Bake for 12 minutes.Let cool.


For the Assembly:


Mix 1 box ( 4 cups ) confectioners sugar in a stand mixer with paddle attachment


Add 5 tablespoons meringue powder and combine on low setting for 1 minutes


Add 1/2 cup water minutes a few teaspoons and blend until smooth ( 3 - 4 minutes


add a four drops of blue food coloring.


Once cookies are cooled completely, pipe edge of each cookie with a thibker version of the blue royal icing. Let sit until piped edge is firm.


Add a few drops of water to thin out blue icing and fill center by flooding. Shake cookie to level and smooth surface.


Once icing has firmed, use white royal icing to create snowflake design. Decorate with sparkle sugar and sugar beads.


Store decorated cookies in airtight container up to 3 weeks
