From Garden to Table at MHCA

This year on campus we are fortunate to have the opportunity to design and create a school community vegetable and herb garden with the goal of providing nutritious and organic foods for our tables, at home and here at MHCA.


Located directly behind the faculty dining room, the pre-existing garden space was the perfect spot to create a garden plan using a technique called High Density Gardening.


This technique of gardening allows us to utilize growing spaces more efficiently than traditional gardening methods. Instead of wasting room between rows of crops, the garden area is maximized —growing more vegetables in less space which often can be grown vertically using support structures and trellises. Once the garden design and layout were created, we got busy sowing seeds indoors under grow lights, from February through April. Over the past several weeks the mature seedlings have been planted into their designated spots in the garden, according to our design plan.

Later this month, here at MHCA our Summer Day Campers will be learning and sharing in the experience, joy and wonders of planting, caring for and harvesting organically grown produce.


We will also be posting updates over the next several weeks and throughout the summer months sharing the progress and evolution that will be taking place in our garden.


Of course, we will continue posting recipes using the fresh ingredients that are being grown.
