Culinary 1
An introductory course available to grades 10 and 11, offers the essential knowledge and skills in the field of Culinary Arts, where Kitchen Labs parallels class work. Students learn safety and sanitation, equipment, fundamental cooking and baking techniques and skill, food preparation and healthy food choices. Students will learn how cultural, ethnic and religious influences impact food choices. Students work independently and in a Kitchen Lab setting to prepare nutritious foods while demonstrating job skills necessary for success in the field throughout the program.
Culinary 2
Offered to grades 10 and 11, this course provides the student the opportunity to build on the foundational knowledge from the introductory course. Emphasis is placed on nutrition, healthy snacking, meal planning and recipe selection. Actual food preparation incorporates more advanced skills and techniques. Students actively participate in recipe selection to reinforce class work. Presentation, serving and etiquette are included. A year end project give students the opportunity to demonstrate professionalism and proficiency.
Culinary Independent Studies
A course designed for the 12th grade to provide advanced Culinary Arts students with the opportunity to showcase their specialty skills, as well as to encourage the pursuit of the commercial study. A study of the commercial foods industry and employment opportunities are explored. Students research the needed post-secondary training required. franchising and/or ownership responsibilities, marketing, and other day -to-day operations required of a restauranteur.
