Miabella's Potato Croquettes




In Italian culture, family dinner is a must. Imagine sitting down to eat and smelling the wonderful aroma of these delicious potato croquettes. These tasty croquettes will dazzle your taste buds with its crunchy shell and warm moist fluffy inside. Between the aroma and the taste you will be quickly transported to the Italian countryside, and will leave you wanting more. As grandma always says, “mangia mangia”!

Ingredients

- 5-6 potatoes (must be potatoes used for baked potatoes)

- 2-3 cups Italian breadcrumbs - 4-5 eggs - Salt (to taste) - Canola oil (enough to fill pan/pot about half way)



Directions

1. First peel the potatoes and cut into cubes 2. Fill a pot with water and add salt to taste, then boil the potatoes until soft enough to mash 3. Remove potatoes from the pot, and keep the water off to the side 4. In a separate bowl, mash the softened potatoes 5. Add spoonfuls of the water from the boiled potatoes to the bowl of until the desired taste is achieved, make sure the now mashed potatoes are dense enough to be molded. 6. Mold the potatoes into an oval shape 7. Scramble the eggs, and coat each potato evenly 8. Coat the potato ovals with breadcrumbs, continue this step one more time dipping them again into the eggs then the breadcrumbs 9. Put canola oil into a pan/low pot, and fry the potato croquettes until golden brown 10. Remove from oil and leave to drain on a paper towel or cooling rack 11. Plate and Enjoy!
