Food Preservation: Canning, Freezing And Drying

Knowing how to preserve food has been essential throughout our history as humans. Considering that before the invention of refrigeration, in the 18th century, which was not perfected and widespread until the 20th century, most of civilization had to make do without refrigeration and freezing. Many of the same food storing techniques are still used in today's kitchens, for preserving the bounty of produce during the summer months.

Today at MHCA, our Culinary Arts students learned the basics of canning fresh tomatoes.

Is there anything better than homemade canned tomatoes picked right from the farm or garden?
