As it's called in Italian, Insalata Caprese, Caprese salad literally means “salad of Capri.” Although nobody knows whether or not the salad was actually first made on the Italian island, it likely originated from a dish made in Capri from a different type of cheese, cacio, served with tomatoes. This recipe is an easy and healthy dinner that’s perfect for those sweet summer tomatoes! Well seasoned grilled chicken breasts, chunks of ripe tomatoes, fresh basil with spring onion. Layered over fresh mozzarella and a drizzle of garlic infused extra virgin olive oil. Molto Delizioso !
INGREDIENTS
- 6 thinly sliced chicken breasts
- 5 very ripe vine tomatoes
- 1/2 of a medium Vidalia onion
- 3 green spring onions
- 1 cup fresh basil leaves ( rinsed )
- extra virgin olive oil
- salt and freshly ground pepper
- 1 large freshly made mozzarella ( cut into 1/2" slices )
DIRECTIONS
- season both sides of chicken breasts generously with salt and pepper
- preheat stove top grill ( or large skillet with 1 teaspoon of olive oil
- grill chicken until cooked and both sides are browned. ( set aside )
- in a separate saute pan, heat about 1/4 cup extra virgin olive oil, a few hot pepper flakes
with 2 cloves of garlic. Saute garlic until golden brown Remove garlic
- dice tomatoes, Vidalia onion, and spring onion and add to a large bowl
- cut basil leaves into a chiffonade
- add basil to tomato, onion mixture
- season with salt and pepper
- add garlic infused olive oil and toss
TO PLATE
- place 2 grilled chicken breasts on a plate
- add 2 - 3 slices of fresh mozzarella
- pile a generous portion of tomato, onion salad on top of chicken and mozzarella
- garnish with a few fresh basil leaves
